Beef and Vegetable Soup

This simple beef soup balanced with veggies is perfect to start a meal. Makes 8 servings.

Ingredients:
  • 1 pound beef stew
  • 3 ½ cups water
  • 1 cup raw sliced onions
  • ½ cup frozen green peas
  • 1 teaspoon black pepper
  • ½ cup frozen okra
  • ½ teaspoon basil
  • ½ cup frozen carrots, diced
  • ½ teaspoon thyme
  • ½ cup frozen corn
Directions:

1. In a large pot, place beef stew, onions, black pepper, basil, thyme and water.

2. Cook for about 45 minutes.

3. Add all frozen vegetables; simmer on low heat until meat is tender. Serve hot.
